For Christmas Dinner this year, I made dessert. I couldn’t decide between Devil’s Food Cake, Triple Chocolate Cake or Lemon Blueberry Marble Cake from Sky High: Irresistible Triple-Layer Cakes. Michael opted for the Lemon Blueberry Marble Cake. I couldn’t argue since I love anything lemon! (I also love anything chocolate so it was going to be a win-win situation regardless) The blueberry-lemon preserves was SOOO yummy! And the cake layers came out level thanks to my water-soaked bands that I wrapped around each cake pan. The actual cake tasted wonderfully lemony and fluffy and light! I made the frosting at my sister’s house and forgot to bring my instant thermometer so I guessed when the sugar/water got to soft-ball stage. I figured I got it pretty close since it developed into soft balls while I was beating it into the slightly beaten eggs. I was worried but it turned out fabulous if I do say so myself (and I just did)! I would definitely make this again! I obviously need to develop some frosting skills but it all tasted good in the end anyways!

Our first meal from one of our Christmas gifts! Potato Leek Soup was our favorite soup in Ireland and I fell in love with Brown Bread in Ireland also. I had the best brown bread at the Boat Yard in Dingle – I wish I had that recipe! The Brown Soda Bread with Molasses turned out really well. It’s a hearty bread and tastes best with a slab of butter – preferably Irish butter! The Potato Leek Soup was delicious and Michael enjoyed using the Immersion Blender for the first time. We can’t wait to try out next meal from The Complete Irish Pub Cookbook!
