For Christmas Dinner this year, I made dessert. I couldn’t decide between Devil’s Food Cake, Triple Chocolate Cake or Lemon Blueberry Marble Cake from Sky High: Irresistible Triple-Layer Cakes. Michael opted for the Lemon Blueberry Marble Cake. I couldn’t argue since I love anything lemon! (I also love anything chocolate so it was going to be a win-win situation regardless) The blueberry-lemon preserves was SOOO yummy! And the cake layers came out level thanks to my water-soaked bands that I wrapped around each cake pan. The actual cake tasted wonderfully lemony and fluffy and light! I made the frosting at my sister’s house and forgot to bring my instant thermometer so I guessed when the sugar/water got to soft-ball stage. I figured I got it pretty close since it developed into soft balls while I was beating it into the slightly beaten eggs. I was worried but it turned out fabulous if I do say so myself (and I just did)! I would definitely make this again! I obviously need to develop some frosting skills but it all tasted good in the end anyways!
