I wish I had taken a picture of the cranberry jam – it was really fun to make although the popping cranberry made a small stain on the Beau’s white kitchen wall… oops.
Grating the frozen pastry dough was a really novel approach and I loved it! The dough was super yummy!

I have been overloaded at work for a while and haven’t had the energy to blog posts on the TWD goodies that I was able to fit in (which weren’t many). I made the coffee espresso shortbread cookies but can’t seem to find my pictures. So please forgive me TWD Bakers for not visiting and commenting. I believe I see the light at the end of the tunnel at work, which could be the end of this month…
My typical day at work begins with waking up at 3:30am (or 3am if I have to wash my hair), getting out of the house by 4:30 (or 4am), commuting 87 miles to work in Rancho Bernardo, working 9 regular hours (we’re on the 9/80 work schedule), working an additional 1-4 hours depending on what needs to be done that day, coming home, taking care of the puppy (poor Marshall, stuck at home while I’m away for at least 12 hours a day), taking care of me, going to bed by 9, 9:30 and repeat. I am very grateful to be gainfully employed – especially after having been laid off last year, it’s just that it gets to be very tiring – but like I said, I think I see the light at the end of the tunnel.
Well, enough complaining, here are some pictures for your enjoyment. HAH!

Kimberly of Only Creative Opportunities picked this week’s (last Tuesday) TWD delectable – Lots of Ways Banana Cake. Lots of ways because you can sub ingredients with what you have on hand or with whatever your stomach desires! It calls for coconut milk, but you could sub it with buttermilk, it also calls for coconut but you can sub it with any other dried fruit or chocolate chips like me! You have to head over to Kimberly’s and literally see Lots of Ways Banana Cake! (You can also get the recipe too – lucky you!)
I baked this two Friday nights ago and took it to my knitting class last Saturday. I always feel a little leery about bringing goodies to knitting class, especially today with chocolate ganache frosting. I had to put my white yarn away in my bag… It seemed to be a hit so this is a keeper! Which is a good thing since I still have more coconut milk from the can that I bought…
Wow, I’m almost caught up with this month and it’s the last day of the month – figures. I have the ingredients for the Chewy Chunky Blondies but I probably won’t be able to bake them until tomorrow.

Karen of Welcome to our Crazy Blessed Life chose Brrrr-ownies for the TWD Bakers to bake two Tuesdays ago. I actually baked it for that week but didn’t write my post until now. Work has been a little crazy busy these days, I’ve been working the 6pm – midnight shift a few days a week and on Saturdays the 6am – noon shift in the lab at work. Bleah.
When I baked these brownies the Beau was out for the day riding his horse Slim. He had his camera with him and I couldn’t find mine so my photos are from my cell phone. So not so great photos but the brownies were great!!
On the P&Qs for these Brrrr-ownies, it seemed like the York Peppermint Patties melted all over the place. I thought I’d be clever and freeze them. HAH! I think it would have worked better had they been Junior Mint size, but cutting them into bits made them more conducive to melting all over the place. No matter, it still tasted delicious! I saved a few pieces for home and the Beau took the rest to work where it disappeared in good time. Yay!

I’d like to try the Lots of Ways Banana Cake which was one Tuesday ago because I love bananas, especially in baked goods! Which is weird for me since I usually like my fruit fresh, not baked.
